Easy, Eco Organic Peppermint Holiday Hot Chocolate

Happy National Hot Cocoa Day! Yep, that's actually a day (look it up if you don't believe me). To celebrate I finally recorded my new vegan hot chocolate recipe, which I've been perfecting over the last few weeks. I've experimented with different nut milks and flavors and this one is the richest and tastiest yet! Plus, it's free of gluten, soy and sugar and you can use all bulk ingredients. Enjoy!


Ingredients:
  • Nut milk of your choice - 2 cups (I make almond milk)
  • Optional: handful of hazelnuts
  • Optional: generous sprinkle of hemp seeds
  • Vanilla extract: 1 tsp
  • Stevia liquid: 20 drops (or to taste; I use SweetLeaf's Vanilla Creme)
  • Cacao nibs (or dark chocolate pieces): 1 tbsp
  • Cinnamon: 1 tsp (or to taste)
  • Nutmeg: 1/4 tsp
  • Optional: dash of cayenne pepper
  • Cacao powder, raw (or cocoa powder): 2 tbsp
  • Peppermint extract: to taste (I use 1 tsp)
  • Optional: vegan whipped cream of choice (I use rice whip, which contains a little rice syrup)
Directions:
  1. Make almond milk if necessary
  2. Blend in hazelnuts, hemps seeds, vanilla, stevia and cacao nibs
  3. Strain into pot
  4. Put on stove at medium temperature
  5. Whisk in cinnamon, nutmeg, cayenne pepper, cacao powder and peppermint
  6. When at desired temperature, remove from heat and pour into glasses
  7. Top with vegan whipped cream and a sprinkle of cacao powder
