Creamy, rich, and sweet, this raw recipe is easy to make and free of refined sugar. If you get everything in bulk then it's very eco-friendly as well!
My sister Mary sent me this recipe a few years ago with a very cute picture of her enjoying it with the GlassDharma straw I gave her. Though it's a little high in natural sugars, it's a great occasional treat when you need something refreshing and crave some tropical fruit. If you want to make it extra eco, buy fresh fruit and freeze it yourself - you can even juice your own oranges! Then buy some flaxseed in bulk and it's completely packaged free!
Way back in 2009 Nik Tyler (aka, the man who inspired me to be vegan) went to "two transformative weeks at The Rancho De Sol-Ph Miracle Ranch" and came back with incredible enthusiasm and energy. So much so that he sent me daily emails of the foods he had been making, with beautiful pictures. I posted these on Eco-Vegan Gal and they are some of the most popular recipes on the site.
I should probably call this recipe Banana Mint Chip Chilly Cream, since it's not very icy. It doesnt really matter though - the consistency isn't what makes this dessert worth whipping up (literally), it's all about the flavors. Easy, quick, inexpensive, and guilt-free.
Here's a delicious, healthy recipe for vegetables that is quick, easy, and involves no cooking or baking that will give you tons of energy and nutrition: green juice! All you need is a juicer (such as the Omega 8004 like I have), a bunch of your favorite green veggies, and about 10 minutes of time. It's a great idea to have it for breakfast because it's a natural energizer and mood booster, so it sets you up for a great, happy day. (Jump to the bottom of the post for the video recipe)
