Ingredients:
- 1 grated carrot
- 2 grated potatoes
- 1 grated zucchini
- 1 clove minced garlic
- thyme
- extra virgin olive oil (try California Olive Ranch - it's soooo fresh and delicious)
- salt and pepper
Preparation:
- Place grated veggies in a kitchen towel and squeeze out the liquid.
- Mix with other ingredients plus 1 T olive oil.
- Preheat large pan with 2 T olive oil, and add veggies (press down so pancake is about ½ inch thick).
- Cook 8 mins per side.
