Easy Gluten & Soy-Free Vegan Pizza

To me, this isn't much of a recipe - it's more like inspiration for having fun and getting creative in the kitchen. The main ingredients were store-bought and packaged, so anyone can make this in a matter of minutes using their favorite crust, sauce and plant-based cheese. However, if you're nervous about making a pizza free of dairy, gluten and soy that will still taste good, you have my word that this one is fantastic (even non-vegans like it). 

Serves 1-2

Ingredients

  • Gluten-free, vegan pizza crust (Iamori is used in this recpe, but I also like Nature's Hilights frozen brown rice crust and it's easier to find)
  • Pizza sauce (marinara can be nice too; I used Eden Organics)
  • Vegan cheese (my favorite is Daiya)
  • Garlic powder
  • Black pepper
  • Chili flakes
  • Tomato (sliced)
  • Jalapeno (chopped)
  • Red bell pepper (diced)
  • Black olives (halved)

Instructions

  1. Preset the oven to 400 degrees
  2. Make or use a gluten-free, vegan crust. If you want the crust to be a little crispy, you can spread on a bit of oil and let it toast in the oven for a few minutes before putting on the topings
  3. Spread on pizza sauce
  4. Sprinkle on your favorite vegan cheese
  5. Dust on garlic powder, black pepper, chili flakes
  6. Top with your favorite veggies like tomato slices, jalapeno, onion, red bell pepper and black olives (mushrooms are scrumptious too)
  7. Put the pizza in the oven and bake for 10-15 minutes (until the cheese has started to melt)
  8. Broil for a minute or two to brown the cheese (make sure to watch it so it doesn't burn)
  9. Slice into pieces and enjoy!
