Banana Mint Chip (Almost) Ice Cream
I should probably call this recipe Banana Mint Chip Chilly Cream, since it's not very icy. It doesnt really matter though - the consistency isn't what makes this dessert worth whipping up (literally), it's all about the flavors. Easy, quick, inexpensive, and guilt-free.
Ingredients:
- banana, frozen - 1
- almond butter - 1 tbsp
- vanilla extract - 1/2 tsp
- cacao nibs - 1 or 2 tbsp
- mint leaves, fresh - 2-4 leaves
- maca powder - 1/2 tbsp
- optional: non-dairy whipped topping (I used Rice Whip, but homemade cashew cream would be great)
Directions:
- Run banana through food processor, strong blender, or masticating juicer (like the Omega 8004)
- Once smooth, add in rest of ingredients and blend or process until well combined (don't overdue it unless you want a smother, whipped cream-like consistency)
- Top with optional whipped topping, cacao nibs, and a mint leaf
