Banana Mint Chip (Almost) Ice Cream

I should probably call this recipe Banana Mint Chip Chilly Cream, since it's not very icy. It doesnt really matter though - the consistency isn't what makes this dessert worth whipping up (literally), it's all about the flavors. Easy, quick, inexpensive, and guilt-free.


  • banana, frozen - 1
  • almond butter - 1 tbsp
  • vanilla extract - 1/2 tsp
  • cacao nibs - 1 or 2 tbsp
  • mint leaves, fresh - 2-4 leaves
  • maca powder - 1/2 tbsp
  • optional: non-dairy whipped topping (I used Rice Whip, but homemade cashew cream would be great) 
  1. Run banana through food processor, strong blender, or masticating juicer (like the Omega 8004)
  2. Once smooth, add in rest of ingredients and blend or process until well combined (don't overdue it unless you want a smother, whipped cream-like consistency)
  3. Top with optional whipped topping, cacao nibs, and a mint leaf
