Raw Vegetable "Fried Rice"
I love the challenge of making creative meals with limited ingredients, especially when they're extra healthy. This recipe was adapted from Cafe Gratitude's "Raw Veggie Rice", which is a raw dish I've never made before, nor is it common in raw recipe books. I added a little oil and salt to it, but those could easily be left out. The taste is savory and refreshing - a cross between rice and a salad.

Mary's Tropical Fruit Smoothie
My sister Mary sent me this recipe a few years ago with a very cute picture of her enjoying it with the GlassDharma straw I gave her. Though it's a little high in natural sugars, it's a great occasional treat when you need something refreshing and crave some tropical fruit. If you want to make it extra eco, buy fresh fruit and freeze it yourself - you can even juice your own oranges! Then buy some flaxseed in bulk and it's completely packaged free!

The gluten-free soy-free diet is going really well - I feel wonderful. But it is a little tricky trying to keep my meals varied and exciting. I went to Whole Foods last night and was in the mood for something Mexican, so I grabbed some things and threw this dish together. Though it is really simple, it's insanely delicious. The tortillas have a great flavor and texture, the Daiya melts wonderfully, and the salsa gives it kick and the satisfaction of fresh veggies.
